I LOVE salted caramel. Love. Love Love. My favorite kind are the Béquet salted caramels from Montana {one of my first posts ever}, but sometimes when I am having a craving they aren't the easiest sweets to find last minute. I googled salted caramel recipes and discovered this recipe from Food.com. I was skeptical at first since it was a microwave recipe but after reading the reviews I decided to give it a whirl.
Ingredients:
1/4 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup light Karo syrup
1/2 cup sweetened condensed milk
1. Combine all of the ingredients and mix well
2. Microwave for 6 minutes, stopping to stir every 2 minutes
3. Pour into a greased pan. DO NOT use parchment paper. I made this mistake the first time making these caramels and I had to throw out the whole batch since it sticks to the caramel. Just use butter or non stick spray. Sprinkle with sea salt and put in the fridge to cool.
Once the caramels are cool you can slice them into squares using a sharp knife. If they are still warm you will end up with a sticky mess.

How easy are those to make? No baking, no candy thermometer and no funky ingredients. Perfect for a quick way to satisfy your sweet tooth. Might be something different to bring to a superbowl party this Sunday!

ReplyDeleteGrrrr, I just made these and accidentally wrote your instructions down wrong...I used 1/2 cup butter instead of 1/4 cup! Hopefully they'll still turn out! They are cooling in the fridge now. We shall see!
ReplyDeleteWell, I'm happy to report...not that anyone was losing sleep over it...but, the extra butter didn't ruin the recipe! I'll make it right next time and until then I've got to figure out a way to stop eating them!

ReplyDeleteOkay, I'm obsessed with these now! Just made them again with the correct measurements for butter but this time I made them with dark brown sugar and used pink Himalayan salt for the top and they are unbelievable! Also, the dark color makes the pink salt show up...just in time for Valentine's day!
