Shrimp Quinoa Salad


Ingredients:

Quinoa {pre-washed}
Shrimp 
Avocado
Pine Nuts
Dried Cranberries
*ingredient amounts vary depending on preference

I absolutely LOVE quinoa. Having celiac makes eating grains a bit more tough so quinoa is my go carb of choice. This recipe is super easy and delicious and makes for the perfect healthy dinner. My roommate's friend Taryn was in town from D.C. and cooked this for us one evening. The amount of each ingredient will vary depending on how many people you are cooking for and if you like more or less shrimp or avocado for example. I typically allow for 1/2 cup of dried quinoa per person as a guideline.




The first step is to sauté the shrimp until fully cooked. You can also use frozen shrimp but I prefer to purchase them uncooked and add some salt, pepper and a bit of rosemary for seasoning. While the shrimp is cooking, toast the pine nuts and cook the quinoa using either water or chicken broth as the base. Typically I use 1 part quinoa, 2 parts water or broth, as a guideline for a good consistency.


Toss the quinoa, shrimp, pine nuts, avocado and dried cranberries in a large bowl and season to your liking. Again, as I mentioned before the proportions of ingredients are up to you!


So easy, filling, healthy and scrumptious!! Enjoy!

Happy {Navy&Black} Friday!

One of my top color combos for this fall are two of my favorite basics, navy and black. Typically these colors haven't been mixed, but lately it seems to be the go-to look. A classic navy blazer can be perfectly paired with a structured black bag or boots, or a navy top with skinny black pants. Color Me Corduroy


As the summer fades into fall it is time to swap out the shorts for jeans and cords. Over labor day weekend I stopped into Madewell and found the most fun pair of polka dot cords for weekend strolling.  The "skinny skinny ankle cords" are so comfortable and a perfect alternative to my usual jeans.


In addition to the printed pairs, the cords also come in solid colors as well. The pants go perfectly with a denim button down or just a plain white tee. Comfortable and colorful, the perfect combo. Happy Fall!

They Say It's Your Birthday...

Notable Necklaces

This past weekend I met up with my best friend before heading to brunch and loved the necklace she was wearing. She always picks out the best statement necklaces but I was shocked when she told me she got hers at Zara for only $30.



The bright colors and detail make this necklace {Cord Chain Necklace} the perfect way to add color to a nautical shirt or a plain white button down. Ali received so many compliments throughout the day while wearing her necklace that I decided to order one as well. 

Zara also features a chain mesh bib necklace for $30. I love the collared necklace trend but do not want to spend a fortune on something that may not be the most classic investment. In addition to the statement necklaces, Zara also offers a number of fashion forward necklaces, bracelets and earrings. The collection is the perfect way to have bold accessories for the fall without breaking the bank!

Happy {Cobalt} Friday!

Happy Friday! I have not been able to get enough of anything and everything cobalt. It seems like it has been the color this summer and into the fall. From handbags to jewelry to nail polish, cobalt has become the new go-to for a pop of color. Here are some favorite snapshots of this blue hue. TGIF! Pumped Up Kicks


While shopping around this lazy Labor Day weekend I stopped into Madewell to see what was in store for fall. I love the brand partnerships they offer and was so excited to see the all-American shoe company, Keds, had joined forces with Madewell.


My favorite pair of sneaks are the black and tan geometric print. A great way to change up the neutral colors? Add bright colored laces! Perfect for walking around the city this fall.

Lazy Labor Day


Happy Labor Day friends! As the summer is finally winding down I am starting to get excited for the fall season. I cannot wait for boots, cashmere sweaters, red wine, puffer vests, loafers, denim, scarves, hot cider and all things autumn.
